Independent butchers can enter the national competition in the following categories: Sausage (pork, speciality and Lincolnshire(Style)); Pie (pork and speciality) and Pastry Slice, all of which are judged cold. The Championship has previously attracted entrants from as far afield as the South Coast, Wales and Northern Ireland.
Perpetual Trophies are awarded to the class winners and gold, silver and bronze certificates are awarded to all entries reaching the required standard.
The overall winner of the Sausage Classes wins the Nottinghamshire Council of Retail Meat Traders Shield and is also put forward for the Champion of Champions National Competition.
