The winning flavour design for a new glaze is a mixture of cranberry, orange and spice, provisionally called 'Christmas Spice'. The glaze will be named after Mark and will be developed at the Witwood headquarters in Banbury and marketed nationally as part of the Witwood range of products. Mark will also be presented with Witwood products to the value of £250.
The competition kicked off earlier in 2010, with Witwood inviting butchers to submit ideas for a glaze that they would like to see in their chiller. Subsequently it was Mark and his daughter Chloe who came up with the seasonal recipe idea. "We are already planning on some specials, perhaps using the glaze with turkey, or even pork," Mark said.
According to David Brennand, distribution partner and managing director of Witwood's parent company Globe Food Ingredients, the response to the competition was excellent. "It was most enjoyable to work with butchers who are passionate about their business. We strive to offer premium-quality products and excellent service at a very competitive price"
The Cranberry, Orange and Christmas Spice product will be available from the end of October.
