Sainsbury's first 'Master Butcher'
Sainsbury’s has become the first major retailer to employ a fully accredited ‘master butcher’ under the Meat Training Council's new qualification scheme.
Chairman of the Meat Training Council Bill Jermey said: “Many butchers regard themselves as ‘master butchers’ and frequently use the term, despite that fact that they have no real entitlement to do so. This award helps distinguish those who have the right credentials to be recognised as a ‘master butcher’.”
Julien Pursglove, who has been with Sainsbury’s for 32 years, is only the sixth person in the UK to be recognised by the Meat Training Council as a ‘master butcher’. To achieve accreditation, he had to demonstrate his knowledge of traditional skills, from understanding livestock to slaughter methods and butchery, as well as modern hygiene practices, retail and training and people management.
He will receive his award later this week from HRH The Princess Royal, this year’s Master of the Worshipful Company of Butchers.
