Welsh red meat body offers free beef carcase selection course
Hybu Cig Cymru – Meat Promotion Wales (HCC) has introduced a free course for beef carcase selection training.
HCC said: “Beef producers in Wales can be the best at selecting an animal for slaughter if they attend.”
Lamb carcase selection training has been available for a number of years and, due to its success, the same experience is now being offered to beef producers.
HCC described the sessions, held at St Merryn, Merthyr Tydfil, as “practical and hands-on”. Attendees assess live animals in the lairage prior to slaughter, before viewing the carcases with experienced trainers, who will look at the pros and cons for processors and consumers.
Luned Evans, HCC industry development officer, said: “Farmers will often select their animals based on personal preference and experience. These sessions, however, will help them understand how to meet the requirements and expectations of processors.
“They will also emphasise the importance of handling the animal rather than selecting on weight alone, identifying the key areas for recognising a suitable condition for slaughter.”
Topics such as animal health and welfare will also be covered. Evans added: “The producers themselves are seldom offered a chance to step inside the abattoir to see how the production line works and meet site managers. We would encourage farmers to make the most of this opportunity.”
