New venison product hits the shelves
Northern Irish butcher O’Doherty’s Fine Meats has launched a new venison product to cater to the rise in popularity of game meats.
The new product is a Wild Venison Terrine, containing sika deer that are sourced locally at the Brookborough Estate.
Managing director Pat O’Doherty told how requests by local customers acted as the inspiration behind the new terrine. “We’ve seen considerable interest in venison over the past few years, especially from leading chefs who have been using our renowned Fermanagh Black Bacon in their dishes.”
As well as venison, the terrine is produced using turkey and pork with herbs and spices. A “lower fat content than beef” is said to be the reason that the meat is rising in demand.
O’Doherty’s, which is based in Enniskillen and Fermanagh, is a family-owned and run business. Commenting on serving techniques, O’Doherty explained: “While it’s ideal served cold with a sweet chilli chutney, the terrine can also be grilled and cooked in an oven.”
O’Doherty is also responsible for launching Ireland’s first Black Pudding Festival, the third of which will be held later this year in Enniskillen and will see black puddings from more than 20 countries displayed.
