Team UK record best-ever finish in International Young Butcher Competition

The UK International Butcher Team of Lucy Crawshaw and Joe Smith scored their best-ever result at the International Young Butcher Competition at IFFA in Frankfurt, Germany. 

Competing in six categories against other elite apprentices from Austria, France, Germany, Holland and Switzerland, Team UK finished fifth overall, with Lucy taking third place working with an LMC of Beef in the Surprise category.

Joe narrowly missed out on third place in the ready-to-eat ‘Europe’s Regions’ category with a Chicken Terrine.

International Butcher Confederation (IBC) president and Luxembourg butcher Jean-Marie Oswald complimented the UK team on its performance, saying it was a surprise to the international jury as to how much progress had been made compared to UK performances of the past.

The International Young Butcher 2016 award went to Maarten Wolters of Holland, who got a first in Barbecue, a second in Main Course, a joint third with Lucy in the Surprise category and third place in Europe’s Regions.

The team trophy went to Switzerland with competition runner-up Natacha Henzer getting a category first for Main Course and a trio of seconds in the Kitchen Ready, Barbecue and Surprise categories.

The competition is the end of months of preparation for Lucy of Taylors Farm Shop, Lathom, and Joe from Lishman’s of Ilkley, which included appearances at Foodex, and breaking Top and Rumps of Beef at ABP (Langport) in Somerset in April.

The International Young Butcher 2016 UK team organised by the National Federation of Meat and Food Traders (NFMFT) is sponsored by Anglo Beef Processors (ABP), AHDB Beef & Lamb, AHDB Pork, Dalziel, the Institute of Meat, Leeds City College, Orange Butcher, RAPS (UK), Weddel Swift and the Worshipful Company of Butchers.
