North Yorkshire develops heritage breed Christmas alternatives
Online heritage breed butcher Farmison & Co has produced a number of alternative dinner options for the festive season.
The meals have been created by Michelin-starred chef Jeff Baker and are delivered to roast with cooking instructions, meaning less time is needed the kitchen.
The range includes Swaledale stuffed leg of hogged, suckling pig, Yorkshire Dales partridge and three-month cured Yorkshire ham.
Prior to being prepared by a team of artisan butchers, customers have the freedom to choose the breed and maturity of the animal, before it is delivered to the chosen address between 19-23 December.
For those who want something more traditional, Farmison & Co still provides herb-fed turkeys, reared by farmer Edward Wilkinson.
The method of rearing them on herb feed was developed when Wilkinson raised his chickens in this way. He introduced it to his turkey flock as it enhances the taste of the bird and adds a succulent taste.
