Game on the menu at Leeds City College
Leeds City College is to host an exclusive game seminar with chef Jose Souto.
The one-day event will take place on 18 November at the college’s Printworks Campus and is open to people across the supply chain; from food experts to amateur chefs and to already seasoned professionals.
As well as learning how to cook the meat, attendees will learn how to study the identification and preparation of the animal.
Souto is currently a Chef Lecturer at Westminster Kingsway College where he specialises in game meat. “It’s great for us here at Westminster Kingsway College to be working in conjunction with Leeds City College,” said the chef. “I am really looking forward to showcasing some of the bountiful species of game found in the North of England and hope to demystify and educate everyone on their provenance, preparation and uses.”
The day will be divided into two section. Participants will be witness to a breakdown of a whole venison carcass, followed by a butchery demonstration where it will be displayed as joints and larder trimmed cuts.
