Yorkshire butchers elect new president

Award-winning Ilkey butcher David Lishman has been elected as president of the Confederation of Yorkshire Butcher Councils.

Lishman is a champion of Yorkshire-reared meat and a member of the north-east region of the national Butchers Q Guild. He was named as one of Rick Stein’s food heros and has been a judge for BBC Three’s ‘Young Butcher of the Year’ competition for the past two years. His butcher’s shop has won many awards, including National Champion of Champions.

At the confederation’s annual meeting, he called on independent butchers to maintain their high standards. “We produce the best meat products and know how to mature and cook meat better than anyone else in the trade. We must continue to capitalise on our experience and service,” he said.

Confederation secretary Mike Ward, of Stables Butchers, Keighley said: “David is a great ambassador for the trade and his high standing can only help create renewed interest in the work of the confederation, and raise our profile among butchers right across the county.”
