Young butcher recruited for wagyu business

The Yorkshire Wagyu Company has welcomed 22-year-old Aaron Marshall to the new position of butcher at the company’s on-farm butchery unit. 

“The investment in the new butchery unit and employing Aaron has made a real difference to our business,” said Jonathan Shepherd, the Yorkshire Wagyu Company’s director.

“We now have the facility and the resource to be able to react quickly to customers’ needs and to butcher the wagyu to individual chefs’ requirements.”

Marshall, who has worked in the trade since the age of 14, also expressed his excitement at taking up his new role. “Wagyu is unlike any meat I’ve ever butchered before and I’m really enjoying the challenge. I’m a keen cook, so it is also very interesting to work up wagyu recipe ideas and talk to chefs about how they want the meat butchering for their menus.”
