Kennedy Bacon meets customer demand by expanding operations

Northern Irish dry-cured bacon, ham and gammon firm Kennedy Bacon is catering to an increasing demand for its products by expanding its production space.

Based near Omagh in Co Tyrone, production facilities will double in a response to demand for orders from retailers within the Musgrave Group. Its brands include SuperValu, Musgrave Market Place, Daybreak and Centra. Furthermore, Kennedy Bacon has secured its first export markets, to independent retailers in the Republic of Ireland.

The new expansion will allow the business to extend its dry-curing and storage facilities. “We’ve had to increase production capacity because of the growth in business especially in Northern Ireland,” commented Mervyn Kennedy, founder and managing director of the business.

“In addition, it will enable us to focus on our existing sales in Co Donegal and to explore opportunities in other parts of the Republic.”

As a third generation farmer, Kennedy has developed a wide range of dry-cured products from his herd of pigs. The bacon processing business was launched in an effort to provide some diversification to the farm. His decision to focus on developing his own dry-curing technique was inspired by his drive to offer customers a distinctive taste.

“What helps to set my bacon apart is my unique dry-curing technique,” he explained. “It’s my own recipe from my experience of rearing my own pigs. I also slice, prepare and package the bacon. This means the entire process is under my control, ensuring consistent quality and provenance.

“I decided to concentrate on dry-curing because I wanted to develop different products that didn’t involve pumping the bacon with water and preservatives. My bacon is cured in as near to the traditional way as possible, using the minimum amount of cure, which leaves the bacon less salty.

“The result is a tasty product that allows the pan/grill to stay clean. And with no water added the bacon tastes as it should - savoury, yummy and moreish, particularly at breakfast.”

Kennedy Bacon products recently found success at the UK Great Taste Awards and the Blas na hEireann Irish National Food Awards in Dingle, Co Dingle.
