HCC says its collection concentrates on the 'modern clever cook's expanding interest in designer food, tying it in with a back-to-nature content of traditional dishes with a twist'. Booklets will be available at independent butchers' shops throughout Wales and will give butchers the opportunity to advise customers on cuts needed to make the dishes.

"The emphasis is on warming, traditional recipes that you can pop in the oven and leave for a few hours, made from ingredients that have been popular in the end-of-year seasons for centuries," said Graham Titchener, HCC's marketing executive.

"These recipes will welcome you home after a long day out walking or working. We have produced two booklets to feature Welsh Lamb and Welsh Beef recipes including a version of the staple Welsh Lamb favourite Cawl and a braised oxtail dish.

"There is a stronger focus on offal with a lamb's liver dish and beef and kidney pudding, as well as the Oxtail recipe. But it's not all traditional fare; for those needing to fix a quick family meal there's a tasty stir-fry recipe as well," Titchener added.

The Autumn Winter Collection will have a range of promotional point-of-sale materials to help advertise the recipe booklets, including two bilingual posters, a carcase cuts chart to help customers understand more of the meat they are buying and HCC's new consumer information booklet, which Butchers can order directly.
