Ness' FR series of friction smokers generate smoke with the lowest temperature of all known methods, according to the firm. They also deliver smoke with little or no formation of carcinogens.
Smoke is created by the friction of a piece of timber against a rotating body.
As well as delivering uniform smoke density, Ness said the FR series produces only minute quantities of dirt deposits, while a special air supply system ensures that "valuable taste-imparting flavouring substances" contained in the timber remain intact. Generation of smoke is managed without waiting or the need to pre-select time. Ness added that there is no after-smoking, and "superlative" sound insulation and a smoke-tight enclosure ensure limited disturbances from noise and smoke.
Operation of the FR series is simple, according to Ness, as using large pieces of friction timber will endure several uses without the need for change.
