The best yet
With less than a month to go until the big day, MTJ's Butchers' Fair Autumn is shaping up to be the best yet. The event, taking place at the Yorkshire Event Centre, Harrogate on Sunday 7 October 2012, will follow the same format as previous successful fairs, offering butchers a great opportunity to network with suppliers and peers, gather inspiration and share skills, best practice and innovation. And, with an extensive list of exhibitors, some first-class speakers and the return of MTJ's prestigious Champion of Champions and the National Pie Competition, the Autumn fair promises to be bigger and better than ever.
Butchers on the look-out for the latest products and services will not be disappointed, with an impressive range of exhibitors from sundries suppliers to ingredients manufacturers, shopfitting firms and trade bodies. Those confirmed for the day include: WR Wright, Verstegen, Dalziel, Harder Bros, Stamford, Booker, Scobie, Lucas, Catra, McDonnells, Jiffy, Bizerba, Watco, Acold, Tasty Trotter and Creative Retail Solutions. As always, visitors will also have access to the co-situated Bakers' Fair, giving butchersthe chance to find inspiration and equipment for pie- and pastry-making.
The meat masterclass zone premiered at the Butchers' Fair Spring in June will return, featuring butchery and added-value demonstrations from Dalziel. "It will be focused on how to make more profit," explains Dalziel's Danny Upson. "We will be giving butchers some ideas on using the lesser-valued cuts of meat and adding value to existing products by incorporating vegetables, sauces and marinades."
This year, Dalziel will also be giving out some technical advice on sausage-making and how to get the best out of sausages by using the right casings and seasonings. "With the economic climate people are downgrading, and sausages are doing really well," says Upson. "But a lot of butchers are not doing sausages, believe it or not."
Further live action will take place on the main stage, with a comprehensive programme of presentations. Speakers so far include Kate Wood, marketing executive at John Penny & Sons, and Roy Craven, head of butchery for Morrisons.
Wood will discuss John Penny & Sons' Meat Crusade campaign, which shines a spotlight on British butchers. "The campaign aims to put the finest butcher's meat back onto every dinner table in Britain by raising awareness of the quality and taste and offering a greater understanding of how ethical meat operations work. In a world of convenience and social media our goal is to reconnect butchers and consumers," she explains.
Craven, meanwhile, will talk about the 'The Importance of Real Butchers to Morrisons', providing some interesting facts and figures on the role of the 'real' butcher in supermarkets.
