Hawksmoor to open sixth restaurant in London
A sixth Hawksmoor restaurant is due to be opened in London. Located on Winchester Walk near Borough Market, the 140-cover restaurant, Hawksmoor Borough, is due to open in February 2017.
Owners Will Beckett and Huw Gott said this had been an ambition for the business since it was first started up 10 years ago.
Beckett said: “We have always dreamed of opening a restaurant in the area. There’s something really special about being on our suppliers’ doorsteps, and as Borough was such an influence on us in the early days it feels like, 10 years later, we are coming home. Borough Market gave us inspiration, contacts and produce – we would like to be able to repay it by creating a special restaurant that celebrates its produce and becomes a long-lasting institution of and for the local area.”
As well as the duo wanting to open a site in the area, the business also has ties to the market with most of its suppliers having a stall or shop in it. These include The Ginger Pig; Neal’s Yard Dairy; Brindisa; Wright Brothers; Chegworth Valley; Borough Wines; Isle of Wight Tomatoes; Kappacasein Dairy and the Fresh Olive Company.
The restaurant will be located in a mid-19th Century building (pictured above) that was a former hops warehouse before being converted into a fruit warehouse. The Hawksmoor team is developing the building along with architect firm Macaulay Sinclair.
“The building has lots of existing character. We’re going to sensitively build the restaurant’s interior around this heritage,” added Gott. “It’s a very exciting project.”
